I'm doing homemade crunchwrap supremes. You could do that with chicken, I guess. if you have hard shelled tacos, just split those in half instead of using tostadas

 

quesadillas with cheddar, tomatoes, green onions, avocados, then when they are done add sour cream. or replace the avocados with guacamole when you add the sour cream. also chicken if you have it. also a side of spanish rice if you have time. TY!!!!!!!!
