PayPal is a single company that is interested in staying ahead of its competition and making as much profit as they can. The banking system (ACH) is super freaking complex, with hundreds of institutions involved, a ton of bureaucracy, and no real incentive to change the status quo. Also being FDIC insured like most banks are, probably adds another layer of regulations on top of it all.

The trick is to not overmix the batter and to drop a smidge of butter on the hot skillet before the pancake batter, gives it the tasty golden edges I do sometimes sub out the baking powder for baking soda & buttermilk and the best way to add blueberries to pancakes is just to sprinkle them on top of the batter when the pancake is in the pan easy peasy!
