the problem or one of them is that this is an international market what is crappy pay for you might be ok for someone in another region of the country of good even great for someone in another country or someone who is just in need of money NOW no matter the hourly pay. The only thing you can do is set your own value for your circumstances and educate requesters that people are doing this as a source of income and not just for fun which at least in academics is probably pretty well known at this point.
