    Some times I get them really really cheap and I'll use them just about anyway I'd use a potato. You can roast them, mash them, boil them. I typically cut them in half, scoop out the seeds. Lay them cut side down on a cookie sheet with a bit of water so they don't dry out and bake them until really soft. Then take that mash and add to thick stews. I like curry but you could do any flavor or with any veggies.

    Also for extra points you can eat the seeds too. Just like pumpkin seeds. Roll them around in some oil and bake in the oven. You can add salt, pepper, chili powder anything.
