The key is in the rice, use the same seasoning mix + chicken stock+ lime juice for that too and simmer it. The chicken was good, but the rice was friggen out of this world! I think I will go back to doing them seperately next time tho, instead of one pan, cause the chicken lost it's crispy skin from one pot.

Mind you, Matt gets upset about bone in chicken, so I then shred his chicken thighs for him like he's 5.

 

I can cook Cajun and some italian but they all require so much work and mt gf would burn water. In fact she did. I had her boil me some water for tea and she let it overboil all over the place, And she can do ramen - if you watch her

I hope so. Because I misread it, submitted, then realized what it might have meant. And I don't think I did too well there.

 

I asked my friend that owns the Indian place we go to why he always used thigh me and he made Tikka Masala with Chicken Breasts and you could really tell the difference.

I don't like to repeat country of origin in a week usually. Or if I do, they have to be wildly different recipes. I made enchilada casserole Sunday but that's different enough from chili lime chicken thighs I let it slide. I did a tofu seasame teriyaki stir fry Monday for Matty boy Monday, doing my super sekret recipe slow chuck roast for sammiches & a mushroom orzo today, and pulling some of my homemade pierogies out of the freezer to fry up with pancetta tommorow.

One of the batches you're doing is tej, right? Don't go in order by number, go by the lowest HIT count, and when you get back from the dentist there will likely still be some of the higher counts up for you to keep it going.
