@Rocknrolla also, next time you're served a fish with its head still on, on most fish, the best meat is on the collar and cheek bone.

I'll be in Louisiana for 18 days, not including driving. I'll be in NOLA for probably 2 days, in Baton Rouge for probably 3, Lafayette for 2 or 3, depending on how often my cousin can handle me being there to play with her brand spankin' new baby, in the swamp for the rest. Trying to figure out where I want to eat in NOLA is proving the hardest part since I'll only be there a little while. Cafe du Monde is a must, I'm thinking Italian at Vincent's on St. Charles because I miss the corn/crab bisque there (and hubby needs a date night), but I'm not sure about the rest of the meals. Snowballs will be mandatory as well. Might hit one of the Brennan's restaurants, but I don't wanna get to fancy. Jonny's PoBoys or Mother's, maybe, too. I'm gonna spend so much money and get so fat. :) Getting some crab au gratin at Ralph and Kacoo's while in BR, for sure.

For all the fish I eat, I did not know this. Gonna have to try this out (I mean, crawfish head meat is p good so I guess I can't be too surprised)

I have never had gator jerky. LOL I'll probably have some fried gator tail at a restaurant near home while I'm there.

What about liver pudding? I used to eat that pan fried, covered with cheese and an egg and on a sandwich...until the first time I had to cook it myself. The gritty texture of it uncooked turned me off and I haven't eaten it since.

I wanna eat at Juan's Flying Burrito while I'm there too, but mainly to drink the margaritas, so we'll have to be sleeping in the city (still up in the air) or I'd have to feel like getting shitfaced enough to let hubby drive in NOLA (and he learned to drive in NY... it's really not a good combination).

HA! Will do. Seriously, always amazing food. I totally took it for granted before I moved away. Now I live for my annual trip there, and make my parents bring me all kinds of stuff when they come to visit at Christmas.

This year, I'm getting there before Easter so I can get some of the local Easter candy - particularly Elmer's Gold Brick Eggs. Mmmmmm. Too late for King Cake Season though. Unless someone good is selling them for tourists. Then I may play tourist. LOL

Maybe you could just get a really nice room for one night in the city while you party so nobody has to drink and drive.
