Magnalite is the choice of Cajuns. If you aren't using cast iron, you're using Magnalite. I make hefty roux all the time in mine.

This is my minimum. It's got the encapsulated bottom so I can use it stovetop. I might get a steel lid for the oven but I've had good luck with glass as I don't shock it or stress/bump it.

I try to get stainless steel when I can. A lot of commercial is aluminum and commercail stainless is crazy expensive... I don't mind scrubbing a couple of rust spots if it gets me into stainless territory.

If I was 100% positive this would never see anything but food, I would want aluminum. Maybe in coming years as I grow my household back.

Just no plastic handles or teflon!
